The CBC; I love a good wrap. Chicken, Bacon and Cheddar is a good combination and makes a most satisfying lunch or light dinner entrée. I’m  starting with some BBQ grilled creole seasoned chickens along wrapped with some double smoked apple wood bacon that was first crisped over the grill then wrapped in aged cheddar and then grilled to a golden brown perfection. This adds so much more flavour when you char the cheese. A few leaves of butter lettuce and some spinach tucked inside, drizzled with a mandarin orange honey dressing and wrapped up together in a fresh soft corn taco skin.
The dressing;
2 oz. of fresh squeezed mandarin orange juice.
1 egg yolk.
1 /2 tsp. Dijon mustard
3 tbsp. of walnut or peanut oil.
1 tbsp. of sweet mirin or balsamic champagne vinegar
A good pinch of dried dill weed
1 tbsp. honey
1 tbsp. Gin or Vodka
salt and pepper to taste
In a small jar with a sealable lid add all the ingredients except the mandarin orange juice.
Shake vigorously till well blended.
Now add half the amount of mandarin juice and continue to shake until completely homogenised and resembles a salad dressing texture.
Adjust the viscosity and the flavour to suit your own personal taste. Mix again and keep refrigerated.
This dressing will stay chilled for 4 days.
Side with a crisp garden salad and your favourite beverage.
