Creole Hush Puppies

Creole Hush Puppies

Mighty Fine Creole Hush Puppies; One of the best kitchenman back yard nibbles are my Creole Hush Puppies. I have wowed a lot of people with these. I would fry up big batches for shore lunches and back yard parties. They go so well with any seafood dish or bbq smoked meats. There simple to make and can be made and refrigerated ahead time and will keep for up to a day. The pork belly lard is important and you will recall the tastes it brings out is similar to old school creole flavourings. They used the fat from the cooked chicken skins and from ducks too....
Louisiana Jambalaya Creole’

Louisiana Jambalaya Creole’

LOUISIANA JAMBALAYA CREOLE’ One of my favourite jobs back in the early eighties was chef for a turn of the century musical called One Mo Time. I took on this position because it gave me a chance to be in New York and it was something I wanted to add to my repertoire. The producers of this musical wanted to have an authentic Creole style menu that would compliment this...

Crab Cakes!

Stars were noted as being the birthplace of New American Cuisine. The restaurant was an instant sensation and quickly became the top-grossing restaurant for years. Chef Jeremiah Tower and his posse of celebrity chefs like Wolfgang Puck became the pioneers of California Cuisine. Bobby...

Make your own flavours and enjoy the crispy goodness by first setting up a condiment tray with all the fillings. Remember to keep it well chilled. The emphasis on detail is to impress. We started the ball rolling with a most delicious house margarita . Perfectly executed....
Beef Brisket Smoked Low and Slow

Beef Brisket Smoked Low and Slow

Momma! Gotta luv the low and slow bbq smoked beef brisket.             No matter if you slice it or pull it or even sauce it up big time. The all time BBQ favourite is a nice marbled heal fatty hunk of beef brisket. My friend Kerry chopped down a few century cherry trees in his back yard that were damaged in a wind storm and stored the wood for the last 3 years to dry. We used few of the larger chunks and turned them into charcoal to use for higher heat cooking requirements. Made a great fire heat source with even temperatures in the BBQ. The...
