Seafood Nibble and Nip!

Seafood Nibble and Nip!

Seafood Nibble and Nip! A Nice Share paltter of shell fish is a nice way to dine in your room if the weather has you socked in or a night staying in to relax is the agenda. I shop local and find fresh seafood at a pittance of the coast served in a restaurant.  Sometimes you find an item that rocks your taste buds. These are oysters, the others dream to be. I will tell you that my quest to find the ultimate raw oyster has been a long one but came to and end in Ucluelet BC at the Raven Lady. I travel with my own condiment caddy and Lizano Salsa sauce for just this occasion....
Lazy Boy Strip Steak a Roni.

Lazy Boy Strip Steak a Roni.

Lazy Boy Steak a Roni. Sometimes the travel Karma gets taken over by mother nature. Road repair or bad weather with high winds holding up ferry travel. I have learned to carry the essentials incase one has to eat alfresco with no power where staying and a shut down of the area services. Ruffing it at the a remote cottage during one of those severe weather evenings. It’s for this reason my supply hamper is packed with simple foods. This trip I brought along a pack of Spanish rice-a-roni subbing moisture using some Motts  clamato mix , dried peas, pickled green banana...
Camp Fire Chicken and Hot Biscuits.

Camp Fire Chicken and Hot Biscuits.

Camp Fire Chicken and Hot Biscuits. I spent lots of time at resorts and lodges throughout my career doing fireside cooking for the guests. I worked the many different positions as I was learning how to cook. My favourite form of preparing food is using a natural wood and charcoal fed fire. I found I did some of my best recipes when I had simple cooking utensils and an outdoor heat source. I started as a young cub scout which procured my interests to anything done with fire. There is something about fire that brings out the best in all foods. I found that the manifesto for...
Fire Roasted T-Bone Steak

Fire Roasted T-Bone Steak

I love to cook over open flame and when I am on a staycation here in British Columbia, the great outdoors has many roadside parks and grills. Most small coastal inlets have a favourite lookout point and close by somewhere to have a picnic or an outdoor bbq. Sometimes a lot of rain or a dry spell which prohibits any outdoor fires can make your plans need a change up. I like to rent a simple cabin with a fire place and when we are forced to stay inside, a nice hot wood fire makes for a great place to make a quick and easy...
Primo Tomato Bisque Soup

Primo Tomato Bisque Soup

Primo Tomato Bisque Soup. During the height of harvest the cherry tomatoes become very affordable and great for roasting and canning. I do both so later on the fresh tasting tomatoes of summers labour, become a mighty fine soup or pasta sauce. Slow roasted cherry tomatoes are simple to do and a great way to get those sweet ripe tomato’s when in season to release their optimum flavours. Line a baking sheet with parchment paper or oil a stainless baking pan and preheat the oven to 375 degrees. Slice the tomatoes in half and lay them in rows. Drizzle some olive oil...
Kim-Chi Cocktail Bison Burger Sliders

Kim-Chi Cocktail Bison Burger Sliders

Kim-Chi Cocktail Bison Burger Sliders. I like a good burger slider. Finding the right bun foundation is the key. Cocktail Kim-Chi Bison Burger and other Sliders on Pretzel Buns.  They are yummy good using cut kimchi and adding some of the chopped cabbage to the Bison Ground Burger Mix. I like the way a pretzel bun can take a lot of hot au juices and still holds together till the last bite. By shaking things up a wee bit I like to make a trio of flavours. One scrumptious fresh chopped sirloin beef burger with fried onions, gorgonzola cheese crumbs and double smoked bacon...
