Knotty Pine Ham, Onion and Cheesy Quiche

ham qSome of you may remember having a slice of the Knotty Pine Quiche. It was very popular and made a great meal. I love a slice of a good egg pie served with a tasty side salad. Here is that simple recipe using the pillsbury store bought pie pastry found in the grocery cooler.
In a bowl crack;
4 large eggs, 1 cup 10% cream, 1/4 cup flour, 1 tbs baking powder, salt pepper, mix well.
1 cup of cubed cold ham, 1 cup of chopped green onion,
1 cup of aged grated swiss and cheddar cheese.
Follow the direction on the pastry box, Heat oven to 400.
Flour a deep dish cake pan or regular glass pie plate and roll over the dough. Pack into the plate crimping the edges to form a wall.
Prick pastry several holes with a fork. Place into the hot oven for 8 minutes. This will help the crust evenly bake. Prick all air bubbles.
Now add the ham, onions and cheese into the partialy baked shell spreading evenly. Now give the egg mixture a vigorous stir to bring in some air and fluff the batter. Pour over the mixture to the very top.
Bake for 35/40 minutes. If the crust is getting to brown, lower heat to 350 for the last 15 minutes. Bake till it has a golden brown cheesey crust and set to cool before slicing. Make a small salad and pour a nice cup of tea tol bring smiles of approval all around.
