Fresh Oregano Lamb Kebabs

Fresh Oregano Lamb Kebabs are simple to prepare.
Use a good cut of lamb with a little marble [fat] intact.
Cut the meat into small bite size cubes and place in a bowl.
 Adding 2 tbs of olive oil,
a healthy squeezed fresh lemon juice,
2 tbs of dijon mustard,
dash of kosher salt some fresh ground pepper, fresh ground cummin seed to tatse and fresh ripped oregano leaves.
 Toss till well coated and store chilled for 3 hours to marinate.
Remember to give it a mix at least once an hour.
Skewer the lamb nugets using some peppers and onion for added flavour.
Preheat your char grill on the highest heat possible and char-grill on high heat marking each side.
This intense heat sears in the meats juices and the marinade protects it from losing moisture.
I like mine to have some good char marks for the added bbq flavour boost!
Serve with some grilled lemon oiled roasted potato wedges, some flavoured rice, a greek salad with some tzatziki to dip.
Simple and good too!
