Fresh Fruit Plunder;

When fresh fruit and berries are available from the south I like to make a quick dessert. Any selection of fruit will do. Mango orange and apple. I use the frozen puff pastry dough available from the grocery stores freezer section. I like the Pepperidge Farm brand. Made with real butter. I form a pastry shell and prebake following the directions. In a bowl I add some french vanilla yogurt, apple butter, a shot of vanilla extract, some fruit juices infused cream cheese and make a nice soft creamy filling. Slice up about 2 cups of fresh fruit.

Now in the pastry shell spoon in the cream and smooth it using a spatula. Arrange the fruit in a way that gives each slice an equal share of the fruit and best eye appeal presentation.

Place into the fridge and let cool. Slice into portions and serve with tea or coffee.
