Roasted Jerk Chicken

Roasted Jerk Chicken.
At home nobody cooks for me. So while the family and friends are sitting in the living room relaxing and watching the tube, you’re in the kitchen getting a dinner together.
When it comes time that the cook just wants to take a break from serving the family.
It’s either phone in take out or go out for a restaurant meal.
If getting someone to cook is not an option, here is a simple healthy meal that can whipped up in a zip and then while cooking, time to catch 50 zzzz’s alone time or whatever you are hankering!
A great tasting cheap and cheerful meal with simple ingredients.
You will need;
Pick out 8 fresh air packed chicken thighs and place into a bowl.
Sprinkle the salt and pepper along with a liberal tablespoon of Yogurt and Jamaican Jerk seasoning, tablespoon each of some minced garlic, ginger and shallot, Squeeze half a lemon and lime juice over the chicken and mix with your hands.
Rub each thigh as you mix incorporating the flavours evenly.
Now let that rest in the fridge for a few moments to marinate.
Now take 4 ears of your market fresh corn and season with salt, pepper and a mixture of olive oil and melted butter, about a 50/50 ratio.
Take your fresh washed nugget potato and cut into half’s and quarters and season with some garlic powder, salt and pepper along with some of the olive oil and butter mix. Toss till well coated.
Now rip off a large piece of parchment paper and pour the potatoes into the centre. Pick up the sides and fold into a tent and the fold over the ends and tuck under making a small bundle.
Do the same with the seasoned corn and set both package’s on a baking sheet and place on the bottom rack in a preheated 375 degree oven.
Remove the chicken and do on a bbq or in the oven by placing some parchment paper on a baking sheet and take one marinated chicken thigh at a time and massage a tiny amount of olive oil into each on folding the skin under and place without crowding.
Set on the middle rack and set the timer for 50 minutes.
Now pour a glass of wine and do whatever you wish for the next 50 minutes. Ding! Go to the oven and pull out the chicken and then the packages of corn and potatoes.
Plate up and sprinkle some torn cilantro leaves and side with some wine or brandy soaked nectarines.
