One of my favourite lunch meals is a bowl of good flavourful bowl of PHO. The Vietnamese street cart staple which was first introduced in 1920 at a place where one could sit to eat, instead of standing or squatting. Many new PHO restaurants are springing up everywhere here in BC. Nothing tastes better then a garden fresh tossed salad. Mouthwatering tomatoes, crispy lettuce, some slices of cool cuccumber, a wedge of sweet bell pepper and maybe an olive or two. Mix 4 parts Virgin Olive Oil to one part Red Wine Vinegar 1/2 tsp of dijon mustard together in a small jar with a dash of dried oregano and basil with some kosher salt and fresh ground pepper. Fresh Oregano Lamb Kebabs

Fresh Oregano Lamb Kebabs are simple to prepare. Use a good cut of lamb with a little marble [fat] intact. Cut the meat into small bite size cubes and place in a bowl.  Adding 2 tbs of olive oil, a healthy squeezed fresh lemon juice, 2 tbs of dijon mustard, dash of kosher salt some fresh ground pepper, fresh ground cummin seed to tatse and fresh ripped oregano leaves.  Toss till well coated and store chilled for 3 hours to marinate.
