Grilled Spring Lamb Kebabs.

Lamb is so versatile and once marinated and seasoned a true charcoal bbq will give you ultimate lamb kebabs. A Souvlaki, or a nice bbq lamb plate dinner. A BBQ lamb gyro is a perfect lunch pleaser.

Lemon/Cardamom infused Basmati Rice with roasted Garlic, Cumin and Pine Nuts. A simple splash of good virgin olive oil, sea salt and ground pepper on the lamb cubes. Let rest then skewer. Now grill and let the tender lamb do the talking to the taste buds. Same for the garlic cloves cumin seeds and Pine nuts. Cashews are good also. Roast in a fry pan till lightly browned. Rinse the rice and place in the pot with 1/2 cup fresh squeezed orange juice and a tsp of butter pinch of salt. Bring to boil and cook for 5 minutes. Add rest of the water and garlic and continue to cook till rice has absorbed all the liquid. Fluff and let rest. Add the pine nuts and some orange zest and some fresh rosemary just before serving. Grill kebobs on high heat, all sides till desired doneness is achieved.

Serve a few kebabs on the rice and watch for the smiles!
