I can remember my first potato chip experience and have enjoyed eating them tasty fried tatter crisps since infancy.
Where I grew up we were surrounded by the snack manufacturers and I remember all the smells as you got close to the factory.

Hostess/Frito-Lay Potato Chips. Jacks Snacks Cheese Twists and Cracker Jacks.

Dare Foods for Jube-Jubes, Scotch Mints and Girl Guide Cookies

Raymond’s Nuts, who made the Oktoberfest Beer Nuts and Hickory Almonds and Cracker Jack’s.

Smiles and Chuckles, made the Turtles, Turkish Delight just to name a few.

A lot of neighbours and friends worked at these plants and like my mother who worked the fry kettles for Hostess potato chips years back would share the bounty with the kids in the neighbourhood.

Potato chips, is by far one of North Americas most favourite snack foods noted in government consumption facts. Over the years as an executive chef I have gotten to know a lot about potatoes especially in the fried form. I’ve met many potato farmers to purchase their expected quotas from PEI to Idaho to make sure that I had enough inventories to keep me in fries and bakers all year. Knowing where to get a good seasonal supply of produce is a chef’s asset.

A product I recommend from a BC all Natural Hardbite great tasting handmade potato chips. After trying Hardbites it soon became clear that this was no ordinary potato chip.

Making hand fried batches of potato chips is no easy feat and my friend Sepp treats making potato chips with a passion. The potato is specially grown here in BC and deep fried in premium fry oil in small batches and stirred by hand until they are perfectly cooked.

Now most chip companies use the main stream cooking methods along with generally universal available salts and spices that make the product their brand flavour. One BBQ chip tastes pretty well much the same until you taste a chip that is handmade. Now that I am older I am concerned about what I eat and if I am going to indulge in a salty snack in front of the old TV or set out some snacks for my guests then the best all natural chip I can get fits the bill to my liking.

To me, life is too short to eat mediocre snacks.

This next recipe using Hardbite Jalapeno Chips which are most excellent with a cold libation or gussy it up, it only takes 4 minutes to prepare.

It is simple to make and once you give it a whirl, don’t delay, you can have it now or keep this recipe to wow your guests at your next family get together.

Start by getting your favourite Jalapeño Potato Chip Brand.

Heat some 75% chocolate bar dark chocolate pieces in a fire proof ceramic dish over a tea light candle stirring occasionally.

(Use a Soufflé or cream Brule dish for a small party or a Fondue Pot for a larger get together)

Crack, don’t grind some coffee bean pieces into the temperate chocolate and mix in.

Using your right hand, dip a Hardbite Jalapeno spiced chip into the chocolate and then savour the taste experience toasting a cheer of approval with pumped left hand and saying “OMG is this legal’.

You can also add a splash of Grand Marnier or Cognac Remy Martin after the kids have gone to bed.
