Jar_Doo Wings.

Jar_Doo Wings.

Jar_Doo Wings. I get asked on a regular bases what is my favourite food. Simple, the chicken wing! Now I’m the kind of chef that over the years of gastronomy found very little food that I don’t like! One food item that has been a staple on so many menus is the lowly chicken wing. When I was executive chef eateries like Turtle Jacks, Pat and Mario’s, Hungry Moose, Houlahan’s, Knotty Pine and numerous other pub, sport-pub-bar concepts for which I  branded and created recipes that were extended as the franchises grew. The chicken...
Mexican Tortilla Soup

Mexican Tortilla Soup

Mexican Tortilla Soup This is one of my favourite of all the authentic sopa de tortilla or Mexican tortilla soup. It’s best if you make it with a rich home-made chicken stock made from scratch. I was shown different versions by great Mexican cooks in Monterey and Seattle on how to make this an authentic soup. Using chicken feet and tripe to give the broth more of a gelatinous consommé taste along with adding a small amount of good tequila made each trial a better batch. Cut up a chicken into a big pot of boiling water along with a couple stalks of celery,...

Skinny Sexy and Smart Mango Chevre Tarts...

Skinny, Sexy and Smart Mango Chevre Tarts. Peel and cut even strips of 2 fresh mango over a bowl into a sieve. Collect all the juices and add juice from one lime. 1 heaping tbs. of marmalade into the juices. Add 1/2 cup cream cheese and 1/2 cup goat cheese. Mix and blend together using a spatula. The juices and the marmalade should be enough sweetener. Once blended keep to the side. In another bowl add a cup of Anna’s cookies gingersnap crumbs and a cup of ritz or graham cracker crumbs. Drizzle a few tbs of melted butter over the crumb mix and form into small ping...
Dover Beach Barbados

Dover Beach Barbados

My stay at Infinity on the Beach Christ Church St. Lawrence Gap was most excellent. Had lots of plans to get out and explore but found that Dover Beach had everything one could ask for while on a Caribbean holiday. The food and drink at Sea Fans kept me coming back for more. The cocktails were awesome. It’s true! I found that the food court had so many good places to try island cuisine and experience some cou-cou, fire roasted bread fruit, rice and peas with goat, lamb stew, fried flying fish or grilled yellow fin, snapper, mahi-mahi, dorado and fish cakes. The...
Naru

Naru

Cathy and I were in the celebration mood while visiting beautiful Barbados. We were looking for that special top notch restaurant and had many to choose from. B…arbados has some mighty fine dinning establishments that are truly rehearsed and polished. Great food with equally as good libations served with no attitude and a sea side view was what we were looking for. Loads of suggestions were given us from the many island foodie connoisseurs and visiting guests to the island like ourselves looking for the best bang for the buck. When you hear several folks say...
